Almond Flour Quick Bread

Ingredients

1 1/4 Cups Almond Flour
3 Eggs
1/4 Cup Unsweetened Almond Milk
2 Tbsp Olive Oil or Coconut Oil (melted and cooled)
2 tsp Baking Powder
1/2 tsp Salt

Instructions

  1. Heat oven to 350˚F. Lightly grease 8×4-inch loaf pan (or line with parchment).
  2. Place all ingredients in large bowl. Stir until smooth batter forms.
  3. Spoon into prepared loaf pan. Bake for 40 minutes or until top is golden brown.
  4. Cool in pan 10 minutes before transferring to a wire rack to cool completely. To make a sweeter bread, add 3 teaspoons of granulated stevia (or sugar substitute of your choice)

VARIATIONS

  • Add a 1 teaspoon of almond extract for more intense flavor
  • Add a 1 teaspoon of vanilla extract for a different variety.
  • Swirl in 1-2 teaspoons of cinnamon before baking.
  • Top with almond slices before baking.
